And she is the only Karen Nielsdatter I have found baptized 1740-52.
And I didn't find any Niels Jensen baptized 1740-52.

Well, 'your' Karen Nielsdatter got her last child 1790, and born in 1742 she would be 48.
Not impossible, especially in those days, when women probably entered puberty later than today, and
therefore also finished the reproductive period later.
Ole: I'm thinking we DO have the right person. She didn't get married until she was 39.... so three kids during the next ten years seems okay to me. I think they (including the husband) were not a very healthy group. Claude
