Probably Gaardejer = Farm owner / Owner of a farm.

The name will be "Mathias Jensen Christensen" - not and never "Mathias Jensen Christensen Gårdejer".

The occupation name only appears with workmans jobs - but never with a farmer; I have never seen that. If the farm has a name - e.g. Vestergaard, the owner could be named as "Mathias Jensen Christensen Vestergaard".
